Buffalo Cauliflower Bites

Cauliflower-lovers, vegetarians and vegans, rejoice. This Buffalo Cauliflower Bites recipe ZINGS and is oh-so-tasty, you’ll want to serve it up time and time again.

Wow! If you have ever needed inspiration to enjoy cauliflower, here it is! Just like the chicken version of Buffalo Wings or Bites, this 100% vegetarian version is scrumptious and has plenty of chilli zing.

Basically it is battered cauliflower pieces or florets in small delicious portions then oven-baked. The batter coats the florets in such a way as to taste a little decadent, yet not so thick as to be rubbery. As you are in control of the recipe, you can add at much or as little chilli relish as required to best suit your preferences.

Buffalo Cauliflower Wings

Serves: 4 as a side
Prep time: 10 minutes
Cooking time: 25 minutes

Ingredients

  • cooking oil spray
  • 1/2 medium cauliflower
  • 1/2 cup flour (or gluten free flour)
  • 1/2 cup water
  • 1/2 tsp garlic, minced
  • 1/4 tsp salt
  • 1/8 tsp freshly ground pepper
  • 2 1/2 Tbsp olive oil
  • 1/2 cup homemade chilli relish

Method

  1. Preheat oven to 230°C fan bake and lightly spray a baking paper lined oven tray or dish with oil.
  2. Wash and pat dry cauliflower then cut into bite sized florets.
  3. In a bowl mix flour, water, garlic, salt and pepper. Mix well to combine.
  4. Toss cauliflower florets in batter and coat well. Place in a single layer on oven tray and bake for 15 minutes, turning once during the baking process. Remove from oven.
  5. In a separate bowl mix oil and chilli relish together. Toss baked battered florets in relish mix and coat well. Place back on oven tray and bake for a further 10 minutes until golden brown.
  6. Serve warm with your favourite dipping sauce, mayonnaise or vegan-friendly alternative.
