Don’t slam a new flavour combination until you’ve tasted it: Nutella Marrow Muffins…where is your spirit of adventure?
Sometimes the garden dictates kitchen shenanigans and the pantry either assists or disables. In this instance, the garden generously supplied marrow and the pantry assisted quite happily with a sly half empty jar of Nutella.
Who in their right mind would have combined these two ingredients!? Well, sometimes a girl just has to experiment. Was it delicious? Yes — and certainly enough to share it with you lot.
Just a reminder, a marrow is merely an overgrown courgette. In this more mature marrow form, the flesh can be a little floury-tasting hence this recipe is to make the most of the harvest in a manner that the whole family will love. If you have courgette, that would work beautifully too.
If you can imagine a carrot cake in muffin form, then you’ll be an easy marrow convert. The two are very similar in texture and easily interchangeable in recipes that carrots may otherwise claim kingship. Run out of cocoa? No need to halt your baking escapades. Nutella goes with just about everything. The result?
Nutella Marrow Muffins
Makes 12
Ingredients
- 2 cups flour, sifted
- 3 tsp baking powder
- 1 cup raw sugar
- 2 cups grated marrow (skin off)
- 3 eggs
- 1 cup vegetable oil
- 5 Tbsp Nutella
Method
- Pre-heat 180°C on fan bake.
- Place dry ingredients together in a bowl.
- Cut off the outside skin from the marrow as it may be bitter. Grate the firm flesh but discard the inner soft mushy centre and seeds.
- In another bowl mix wet ingredients together; marrow, eggs, oil and Nutella – mix well. Make a well in the centre of the dry ingredients and fold in wet mix. With a spatula fold until dry mix has dispersed. The mix will be sloppy, but this is expected.
- Grease muffin tins or use non-stick alternative. Fill mix 3/4 into each mould and bake for approx 20 minutes. Test with skewer to ensure insides are cooked and skewer comes out cleanly.
- Once cooled, remove from muffin tin and sprinkle with icing sugar. Delish.
