Plum Liqueur

You may just have to trust me on this one. All care, no responsibility…but Plum Liqueur, in this case Plum Gin, is delicious!

I am enthusiastic and optimistic! I am not new to boozy fruit. I’ve tried my hand at Brandied Grapes, Sambuca Grapes, Mandarin Schnapps and Feijoa Vodka…all with great results. How can you go wrong, really!? But the time has come to allow plums to shine. So shine you gorgeous things!

The principle is pretty simple. A white spirit will take on other infused flavours quite easily, a little like olive oil. No need to cut the fruit. The natural pores in the fruit, or a few helpful jabs with a fork for firmer fruit, will steep nicely.

Plum Gin

Ingredients

  • 20 plums
  • 4 cups gin
  • 1/2 cup caster sugar

Method

  1. Select beautiful ripe plums with no nicks (bird pecks)!
  2. Using a fork, jab each plum around six times. This will help the plum juice infuse with the gin.
  3. Add gin and caster sugar into an airtight container and add the plums.
  4. Date. Put into a dark place and store for approximately 3 months.
  5. Every now and then swirl the liqueur to (a) enjoy the process  and (b) salivate at the anticipation of tasting it in three months.

Plums on your mind? I hope so. I’m Day#6 into my week long plum challenge due to a bountiful crop. I’m not complaining, I’m loving every second. This week I’ve frozen plums, made delicious yoghurt based Breakfast Smoothie, baked some Gluten Free Friands, created a Mulled Plum Syrup ready for a mulled wine winter and preserved a Spiced Plum Sauce. It’s not nearing the end, it’s really only the beginning
