Nut-Free Apricot Raw Balls

Perfect for a dessert platter, lunchbox or an afternoon tea pick-me up, these nut free Apricot Raw Balls are packed with sunflower seeds. Not a nut in sight!

Call them bliss balls, raw balls or truffles, it’s hard to go past bite-sized mouthfuls of goodness.

Similar to a muesli bar, but without all the added sugar and preservatives, these little beauties are chewy and filling. Not ultra-sweet, they make for a healthy alternative adorned on a dessert-platter and brings a smile to the hard-to-cater-for guests: dairy-free, nut-free and gluten-free. Bingo.

Many raw balls will contain nuts, so for this recipe I used sunflower seeds which worked a treat. The trick is to mill or blitz them in a food processor until they become a fine crumb texture. A zap for 20 seconds should achieve this.

I love baking however creating little morsels of goodness likes these raw balls, certainly keep the baking tins full and, in an airtight container, they last for ages – weeks!

Ingredients

  • 3/4 cup sunflower seeds
  • 200g dried apricots
  • 1 1/2 cups coconut
  • 3 Tbsp maple syrup
  • 2 Tbsp water

Method

  1. Mill the sunflower seeds in a food processor, or by using a blending wand, until they resemble a fine crumb.
  2. Cut up the dried apricots (which helps when blitzing) and add to the food processor, along with the coconut, maple syrup and water.
  3. Form into small walnut-sized balls with your hands.
  4. Roll in coconut.
  5. Store in an airtight container in the fridge.
