With just fresh citrus, vanilla beans and a bottle of vodka, you can create beautifully fragrant homemade extracts that will elevate everything from cakes and biscuits to desserts and frostings.
Many of us grew up buying little bottles labelled “vanilla essence” or “lemon essence”. But when you make your own using real citrus peel or vanilla beans steeped in alcohol, you’re actually making an extract. It’s easy, completely natural, and the flavour is hard to beat.
The process couldn’t be simpler. Place your prepared fruit peel or vanilla beans into clean glass jars, cover with 40% (80-proof) vodka, and let time do the work. Over 4–6 weeks, the alcohol gently extracts the aromatic oils and flavours, creating rich, natural essences without artificial colours or flavours. Give each jar a gentle shake every few days while it infuses.
The secret to a great citrus extra is avoiding the bitter white pith. Use a vegetable peeler to remove only the coloured outer layer of the fruit.
Citrus Ratios – Peel to Alcohol
For 1 cup (250 ml) of vodka:
- Lemon Extract: ⅓ cup lemon peel
- Orange Extract: ½ cup orange peel
- Mandarin Extract: ¾ cup mandarin peel
Each citrus has a different intensity, so the amount of peel changes accordingly.
Vanilla Extract – Beans to Alcohol
Vanilla is wonderfully simple but worth treating with care.
Use: 4-5 whole vanilla beans to 1 cup vodka
Split each bean lengthwise first so the seeds are exposed, then cut them in half if needed to fit the jar. This allows the vodka to extract far more flavour than leaving the pods whole.
The Waiting Game
Four weeks later, the transformation is remarkable. The lemon develops a deep golden hue, the orange becomes rich and vibrant, the mandarin glows with warm amber tones, and the vanilla turns into a luxurious dark extract packed with tiny vanilla seeds.
Simply strain the citrus extract through a fine sieve into clean, sterilised bottles and shake every other day to help disperse the flavours.
Don’t Throw Away the Vanilla Beans
One of the best discoveries is that the vanilla beans still have plenty of life left. Rather than discarding them after the first batch, simply top them up with fresh vodka and start another infusion. You’ll often get multiple batches from the same four beans, making homemade vanilla extract much more economical than buying it.
A Few Extra Tips
- Wash citrus well before peeling, especially supermarket fruit, which may have a wax coating.
- Choose unblemished fruit for the cleanest flavour.
- Store finished essences in a cool, dark cupboard.
- Don’t waste the peeled fruit — use the juice for cordial, baking, marmalade or freeze it for later.
Once you’ve made your own extracts, it’s hard to go back to the little supermarket bottles. They’re inexpensive to make, beautifully aromatic, and a wonderful way to capture the flavour of homegrown citrus throughout the year.
